Jacqueline Guillén in Alley Theatre's production of Torera . Lynn Lane If your knowledge of bullfighting extends only to Hemingway , or perhaps to Ferdinand, Alley Theatre might have just the production for you. And the playwright wants you to know that there's a lot more going on than an animal charging at a red cape.          'It is a metaphorical dance with death,' says Monet Hurst-Mendoza, whose latest play, Torera , begins its world premiere run tonight, May 17. 'We all know that we're fallible, we are going to die eventually, but for 20 minutes in the ring we're watching somebody manipulate death, challenge it, meet it, and then hopefully rise above it.
